Sugar-free Eggnog – easy and delicious

Rich and creamy eggnog is a staple at holiday parties. But at 350 calories a cup, it’s an indulgence few of us can afford.

Here’s a tasty version that’s just 88 calories a cup, and every bit as satisfying as the real thing.

Because it’s made with instant pudding, you’ll want probably want to let it sit overnight in the refrigerator to thicken properly.

But be sure to whisk before serving so the cinnamon and nutmeg don’t settle to the bottom of the bowl. 

Sugar Free Eggnog

Serves 5

  • 1 (1ounce) packet sugar-free instant vanilla pudding mix
  • 5 cups skim milk
  • 1 packet sweetener of choice (optional)
  • ¼ teaspoon ground cinnamon
  • 1 pinch ground nutmeg
  • 1 teaspoon rum flavored extract

In large mixing bowl mix together all ingredients.

Mix very well with wire whisk for at least 2 minutes.

If this is too thick, add a bit more milk and sweetener.

NUTRITIONAL INFORMATION: 88 calories per 1 cup serving,  less than 1 gram fat , 13 grams carbohydrate.
