Healthy Cranberry Bread Pudding with Cinnamon-Vanilla Sauce

Healthy Cranberry Bread Pudding with Cinnamon-Vanilla Sauce

Serves six

  • 8 slices whole wheat bread, cut into 1-inch cubes
  • 1 box (4 oz.) sugar-free stovetop vanilla pudding mix
  • 2/3 cup nonfat dry milk powder
  • 1¾ cups water
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • ¾ cup dried cranberries

Combine dry pudding mix, cinnamon, dry milk, water and vanilla in a medium bowl and mix well.

Add cranberries and bread cubes, stirring gently until bread is thoroughly moistened.

Let mixture stand until the bread absorbs most of the liquid. Spray an 8x8-inch baking dish with vegetable spray, then pour bread mixture into the dish.

Bake at 350º F for 45 minutes. (If using a convection oven, decrease temperature to 300º F).

Cinnamon-Vanilla Sauce

  • 1 box (4 oz) sugar-free stovetop vanilla pudding mix
  • 1½ cups water
  • 1 teaspoon cinnamon
  • 2 tablespoons chopped pecans, walnuts or almonds (optional)
  • 1 teaspoon vanilla extract
  • 2 teaspoons light margarine

Stir together thoroughly pudding mix, cinnamon and water in a saucepan.

Add nuts and cook over medium heat until sauce begins to thicken or comes to slight boil, stirring often.

Remove from heat.

Add vanilla extract and light margarine, then stir until margarine is melted.
