Many skins, peels, and stalks of fruits and vegetables are not only packed with vitamins and fiber, but they could also fight cancer and boost energy levels.  You may already eat the peels and skins of apples, grapes, cucumbers, eggplant, tomato, and zucchini.  That’s a good start!

Potatoes pack much of their nutrition in the skin.  (You get half the daily recommended intake of soluble fiber, potassium, iron, phosphorous zinc and vitamin C in just one 8 ounce spud.)

Squash is high in zinc, which is great for skin and hair health, and beta-carotene which is known to protect against heart disease and cancer. The skins of squashes are too tough to eat, but if you scrape out the flesh as close to the skin as you possibly can, you gain the nutritional benefits from the skin.

Citrus Fruits like oranges and tangerines pack more antioxidants in their peels than their pulp.  Citrus peels can lower bad cholesterol. Add some grated orange or lemon peel into your foods for added flavor.
