The busy spring season provides numerous opportunities to enjoy a potluck gathering with friends and family. For a colorful and healthy veggie side dish, try this low-calorie recipe featuring fresh carrots marinated in a zesty lemon-oregano dressing.
Carrots are an excellent source of the antioxidant nutrient beta-carotene — just one cup of carrots provides more than four times the recommended daily requirement. Carrots also provide essential daily fiber, vitamins A and C, and numerous other phytonutrient antioxidants.
Lemon-Oregano Marinated Carrots
Makes 4 cups
- 1 pound carrots, julienned
- 2 garlic cloves, pressed
- 4 tablespoons lemon juice
- 2 tablespoons nonfat Italian salad dressing
- ¼ teaspoon salt, optional
- Black pepper to taste
- 2 tablespoons fresh oregano, minced
Put carrots into boiling water and blanch one minute. Drain and rinse with cold water. Drain again.
In a small jar or container, combine garlic, juice, dressing, salt, pepper and oregano. Shake well.
Pour dressing over carrots. Marinate at room temperature 1 hour, or overnight in refrigerator.
