Recipe: Anytime Coleslaw


Cabbage is high in vitamin C, which in addition to forming and maintaining collagen (the fibrous tissue that forms a supporting network under the skin's surface), helps to build new tissue for younger-looking skin.

This coleslaw is a great way to enjoy the benefits of cabbage!

Anytime Coleslaw

1/4 cup water
1 teaspoon salt
1/4 cup vinegar
1/4 cup sugar
1/4 teaspoon celery seed
1/4 teaspoon dry mustard
Dash black pepper
1 cup carrots, shredded
1/3 cup green bell pepper, finely chopped
1 tablespoon onion, finely chopped
4 cups green cabbage, shredded or chopped

Combine water, salt, vinegar, sugar, celery seed, mustard and black pepper in a 2-cup microwaveable bowl.

Microwave, uncovered, on high for 1 1/2 to 2 minutes or until mixture boils. Stir, then microwave on high for 1 minute longer to blend flavors. Cool.

In large bowl, combine carrot, green pepper, onion and cabbage. Add cooled dressing. Mix well.

Makes 4 cups, with 105 calories per cup.

To freeze: Pack into three freezer containers. Cover, label and freeze up to 3 months. To serve, microwave on high, one container at a time, for 2 to 2 1/2 minutes or until edges are slightly warm. Break up with a fork and allow to finish defrosting at room temperature for about 5 minutes.
